This is the third product in the SakeBrooklyn LAB series, brewed by Sake Brooklyn Brewing Co. in a Japanese sake brewery.
This craft sake, which uses yuzu peel and sencha tea as secondary ingredients, was released in collaboration with LIBROM in Fukuoka.
About secondary ingredients
I wanted to create an all-Japan craft sake using secondary ingredients that represent Japan, while imagining the type of sake I wanted to make in New York. I used "Yuzu," which is already well-known and catchy overseas, and came up with the idea of combining it with Sencha tea as a slightly unexpected ingredient.
The sencha tea used is made with high-grade sencha tea leaves from Ito Seicha in Ukiha, Fukuoka Prefecture. Founded about 70 years ago by Ito Minoru, the tea farm is still active today, though on a small scale, and he grows tea leaves with his family.
Attention to secondary ingredients
We are committed to using ingredients from farmers who have a close relationship with the maker.
Okubo Farm was introduced to us by someone who helped us run a sake event. We used safe, pesticide-free yuzu, as we mainly use the skin.
Ueda was introduced to Ito Seicha by the drinks manager at his favorite restaurant, whose family runs a tea manufacturing business in Fukuoka. Instead of using first-picked tea leaves, which have a strong umami flavor, he chose to use high-grade sencha, a blend of multiple varieties of second-picked tea, which has a more bitter taste.
Important points in brewing
We make koji and steam rice with the aim of dissolving the rice as much as possible.
In addition, in order to transfer the aroma of the secondary ingredients to the sake without waste, more secondary ingredients are steeped in the clear sake after pressing rather than during the fermentation process.
Taste
You start off with the gorgeous aroma of yuzu peel, followed by the sweetness of the rice, the umami of both the rice and the tea leaves, and the astringency of the tea leaves that finishes off the aftertaste.
