"SPARKLING LEMON" is a new craft sake planned by "OPENBOOK", a famous lemon sour bar in Shinjuku Golden Gai. Ueda assisted with the design and brewing.

This fizzy craft sake is made with lemon juice and lemon peel, making it perfect for summer.
It is recommended to drink it ice cold.

Production Secrets

There are two challenges this time.

1. The yeast starter is made using what is called "lemon moto", which uses the citric acid in lemon juice.
2. While aiming for sparkling wine through secondary fermentation in the bottle, the gas pressure is reduced to make it easier to open.

Due to various design errors, the wild yeast derived from lemons was dominant in the early stages of the mash, causing a high foam and resulting in a terrible incident where the mash overflowed from the tank. In the latter stages, the K901 that we added managed to become dominant, so the mash produced alcohol properly and held up well until the secondary fermentation in the bottle.

The taste is sweet from the koji, but also has a sharp taste with the sourness of lemon, the bitterness of lemon peel, and the fizz of carbonation. The addition of a very small amount of salt gives the flavor a clear outline.

In fact, this sake was completed at the end of April, but it was left to sit in the refrigerator for a second fermentation period in the bottle.

We were planning to release it when the gas pressure was just right, and as of July the condition is ideal so we have decided to release it.

However, since it is a raw sake, I honestly don't know if it will be the same in six months.
If you leave it for too long, the gas pressure may increase and it may become very difficult to open.

It's a drink that feels just right for this hot season, and I hope you'll enjoy it this summer!


*Precautions when opening

-We recommend opening the bottle over a bowl or other tray in case the liquid erupts. -Make sure to chill the bottle thoroughly before opening. -Do not open the bottle all at once, but open carefully, releasing the gas little by little.
