This sake was brewed in a single tank by Ueda as the culmination of his training at Abe Sake Brewery.
Based on the method used previously in the Abe series to make the "lactic acid base version" (adding the liquid from the lactic acid bacteria culture prior to yeast culture in the kimoto as the fourth step), this version further enhances the lactic acid feel.
It is designed to allow you to taste only the pure lactic acid produced by the natural cultivation of lactic acid bacteria, without adding any other acidic elements such as the citric acid produced by white koji.
It is designed to give a relatively full-bodied taste in the early stages with the sweetness and umami flavor derived from the rice, while the acidity of the lactic acid gives a refreshing crispness in the latter stages.
Additionally, to eliminate the tingling sensation that alcohol can make it difficult to drink, we designed the alcohol content to be slightly lower to begin with, and we also hoped that the strong sweetness and richness would help mask the tingling sensation.
