This is sake that was made by the YouTube channel "Youchuubu" together with its viewers as part of a video project.
■About the rice: We received Gohyakumangoku sake rice free of charge from Harukin, a smart farmer/YouTuber who makes use of drones.
In stark contrast to the current trend in sake, which is highly polished, this sake is polished only 80%, using the rice without waste and designed to bring out its individuality.
■ Regarding flavor design, we tried a new production method in which we blend white koji amazake for shochu, which has a sour taste, and yellow koji amazake, which has a sweet taste, into the mash to achieve a good balance.
The koji starter was provided by Kojiya Sanzaemon, a long-established koji starter shop founded 600 years ago, which includes white koji for shochu and yellow koji "Koryu Ginjo", which brings out a strong sweetness.
While you can feel the firm body that comes from the rice that is unique to Japanese sake, the acidity gives it a sharp taste that you will never tire of drinking.
