[What is Sake Tsuku?]
Sake Tsuku is a sake planned and produced by the first class of the sake brewing online salon "Youchuubu" using the facilities of Ishii Sake Brewery.
Using the latest Kyokai yeast "1901 Yeast" and "Koryu Ginjo" koji mold from Kojiya Sanzaemon, a long-established koji maker founded 600 years ago, we have created a sweet and sour, fruity sake that is easy to drink even for those who are trying sake for the first time.
■About 1901 Yeast
This is one of the latest yeasts developed by the association in 2014.
A substance called "ethyl carbamate," which has been designated by international organizations as a "possibly carcinogenic substance," is produced in small amounts in sake during the fermentation process. However, the 1901 yeast does not produce this substance, and it was developed as a yeast that produces superior sake quality.
■About Koryu Ginjo The koji starter used is from Kojiya Sanzaemon, a long-established koji starter maker founded 600 years ago, which we also use in the Sake made by the Yoichu Club.
This is a modern-day revival of a strain of bacteria that was used as a starter koji for sake brewing when the first head of the family, Kojiya Sanzaemon, was working in Kyoto, and is characterized by its strong sweetness.
